Watanabe returns to traditional sake brewing with W Hidaminori Junmai Muroka Genshu. This sake is brewed with Hidaminori rice and pressed with cotton bags dyed with astringent persimmons. This adds a smooth mouthfeel to this fairly sweet, rich sake.
Hidaminori rice is produced in Hida Furukawa. It went extinct in 2000, but was restored in 2020. Watanabe is the only Japanese brewery using this rice. Non charcoal filtered, this sake is bottled at barrel strength for maximum flavor. Serve chilled.
